A 100% Pinot Noir with dark red fruits, plum and a hint of spice. Lots of acid, earthy tannins and a long finish. This wine hits the ideal spot between too light and too heavy.

Emmanuel Giboulot comes from a long legacy of organic viticulture, and remains one of its greatest advocates in Burgundy today. He has four decades of experience in crafting the finest quality wines from a variety of terroir. Hautes-Côtes de Nuits is a Burgundian subregion located to the west of the Côte de Nuits. The vineyards, at elevations of 300-400 metres, populate the sides of valleys. This south-facing vineyard, planted in 1976, is just 5 km from Nuits-Saint-Georges on the hillside of the commune of Meuilley. This is a very old parcel– the vines of Meuilley are mentioned in a writing dating from the 8th century.

Vinification: From old vines growing on soils of mostly clay-limestone soils and white marl. Cultivated biodynamically since 1985, the grapes are picked by hand, destemmed and fermented in open wooden vats. The press and free-run juice are blended, allowed to settle, then spend about 20 days in tank. The extraction of aromas, tannins and colour is natural (no yeasts, enzymes or heat) and is done by traditional pumping over and punching down. The wine is then aged for 18 months in only old oak barrels.
