A 100% Chardonnay with an intense gold colour, and a nose of citrus and freshly-mown grass. Round and supple, with lots of citrus fruit and minimality on the palate. Plenty of fresh acidity and a touch of hazelnut on the finish.

Emmanuel Giboulot comes from a long legacy of organic viticulture, and remains one of its greatest advocates in Burgundy today. He has four decades of experience in crafting the finest quality wines from a variety of terroir. This vineyard is on the upper slopes of the Montane de Beaune, at around 300-370 metres, and just beneath the Beaune Premier Cru ‘Les Bressandes’. This is one of the oldest sites of the Côtes de Beaune appellation. This tiny appellation (not to be confused with the vast Côtes de Beaune Villages) produces wines the characteristic roundness of Chardonnay, with intense flavours and lots of acidity.

Vinification: Forty year-old Chardonnay vines grown on clay and limestone soils with some white sandstone. Grapes are hand-harvested and are gently pressed using a manual press. No sulphites or yeasts added. Fermentation in traditional oak casks, grapes undergo malolactic fermentation, then are aged for 15 months in old oak barrels, with no lees stirring to avoid oxidation.

Match it with: Fish terrine, butter-poached fish, or with Epoisses ou Soumaintrain cheeses.
