Côte de Beaune "La Grande Chatelaine"(W) 2011

Terroir: Côte de Beaune is a tiny appellation of only 52 hectares, one of the smallest in Burgundy – a region already famous for its diverse and often very small parcels. Not to be confused with the much larger Côte de Beaune Villages (with 3,222 hectares), the terroir is characterized by its gravelly clay-limestone soil and its old vines.

Vinification: The grapes are pressed // Cold clarification over approximately 24 hours // The clarified must ferments in large and previously used old oak vats, to preserve its purity and minerality // Ageing for 12 months on its lees.
