Cahors Le Combal (Red) 2021
A medium-bodied, easy to drink elegant Malbec with blackberry, bramble, blackcurrant and a bit of earth. Light but grippy tannins and a round texture. A versatile food wine with lots of energy.
Story: Matthieu Cosse and Catherine Maisonneuve are leading a renaissance of the Cahors region. They share a vision of refined, elegant wines with a distinct personality. The grapes used for this wine comes from the base of the parcel just across from the domaine with a north-facing exposure, meaning it has more shade and grapes take longer to ripen. The 28 year-old vines grow on the Calcareous gravel at the bottom of the hill, an area with more dense clay than higher on the slope.
Vinification: Grapes are hand picked, table sorted and destemmed. Fermentation in concrete tanks to preserve the temperature and allow the wine to breathe. After ferment the wine reduces and oxidises for 2 years in used barrels, then is rested in a stainless steel tank until bottling. Unfined and Unfiltered.
Match it with: Duck confit, roast lamb, steak tartare.
