Caroline made the decision in 2020 that she wanted to produce wines under her own name, following biodynamic practices. In total, Caroline works 2.5 hectares of vines located over 2 plots in Tracy-Sur-Loire - a commune that sits within Pouilly-Fumé AOC - though her wines are labelled VDF, giving her more freedom in her winemaking.

"Coeur Vaillant" is the first cuvée to be vinified and released by Caroline Bain and it’s a triumph!
She adheres to strict principles of no intervention in the cellar and farms the land according to biodynamic principles, including using animal traction in some parts of the vineyard!
Grapes are hand harvested by Caroline and then pressed. She then ferments in stainless steel tanks, matures for 30 months and bottles.

Caroline works 2.5 hectares of Sauvignon Blanc vines spread across two plots in Tracy-Sur-Loire - a commune that sits within Pouilly-Fumé AOC - though her wines are labelled VDF (Vin de France), giving her more freedom in her winemaking.
Pouilly Fumé is in the far eastern part of the loire, where the weather can be more harsh (as the maritime climate of the west doesn’t reach here) and it’s the birth place of Sauvignon Blanc. Soils here are made from silex (flint), clay and limestone resulting in mineral-lead, herbaceous and sometimes smoky wines.
