Intensity, maturity and freshness would be the best words to describe “Cartoixa”. Its fermentation took place for 10 days in Clay Amphoras, followed by 5 months resting on its lees in stainless steel tanks. This resulted in herbal and ripe fruits notes that go very well with risottos and seafood.

Match it with: Prawn & Chorizo Risotto with Parmesan & Garlic.

Terroir: Silty soil of calcareous nature, moderately basic with good drainage.200m above sea level, 7 km away from the Mediterranean Sea.

Age of the vine: 70 years old 

Vinification: Grapes are hand-harvested // Infusion-fermentation of the whole bunches in tanks for 10 days // To run off its own weight (without pressing) // Ageing for 1 month in amphora and then 7 months in stainless steel tank.
