This Sauvignon Blanc from Terre de L’Elu has a deep, lightly oxidative nose with spicy notes (ginger, nutmeg) and candied oranges. A rich and powerful attack on the palate with a long finish. Serve around 12°C.

Story: ”Désirade" is the name of a Caribbean island discovered by Christopher Columbus. The winemakers, Thomas and Charlotte Carsin, are avid sailors and their love of the sea often influences their winemaking and naming. With this wine they wanted to discover a different expression of Sauvignon Blanc, from their schist soils. Thomas describes Désirade as, “A rich, gourmet wine with an ‘extra-varietal’ character. A wine to be desired, like reaching a paradisical island.”

Vinification: Grapes from 10 to 45 year-old vines are hand-harvested (low yield of 30 hL/ha), then the whole bunches are directly pressed. Natural fermentation with indigenous yeasts in 500L barrels. Ageing on fine lees with no stirring in new oak barrels for 12 months, then in stainless steel for 12 more months. Unfiltered. Sulphites less than 20mg/L. 

Match it with: Bresse chicken with cream and morels. Or pork with a creamy sauce. It would also pair perfectly with a "Croûte aux Morilles" (a French speciality!)
