"Désirade" is the name of a Caribbean island discovered by Christopher Columbus. 

This cuvée from Terre de L'Elu  has a deep nose, lightly oxidative with spicy notes (ginger, nutmeg) and candied oranges. A rich and powerful attack on the palate with a long finish. Serving temperature around 12°C. Ready for drinking now, and will keep up to 10 years.

Match it with: Bresse chicken with cream and morels. Or white meat with a creamy mushroom sauce. It would also pair perfectly with a "Croûte aux Morilles" (a French speciality!)

Average age of vines: Between 10 to 45 years old. Yield < 30 hL/ha. 

Vinification: The grapes are hand-harvested // Then the whole bunch is directly pressed // Natural fermentation (indigenous yeast) in 500 l barrels // Ageing on fine lees (no stirring) in (new) oak barrels for 12 months then in stainless steel for 12 more months // Sulphites < 20mg/l.
