VDF "Silices en Bulles" (Sparkling Rosé) 2019
A Cabernet Franc Pet Nat? Really? Yes, and it`s perhaps one of the most unique (and tastiest) Pet Nats on the market. A blend of Cab Franc, Gamay, Côt, and Meunier. On the palate, this wine is the antidote to the typical sweet-tinged single-fermentation sparklers. It is very dry, with an almost saline finish, savoury notes and incredible finesse. This is the Pet Nat for those who insist they don’t like Pet Nats! A lively, refreshing stunner. Serve at 8°C.
Reynald Héaulé is known for his passion for rare and native grapes and his expertise in blending them into cuvées that showcase their potential. With this blend, he starts with a base of Cabernet Franc then blends in Gamay, Côt and Meunier all from a single year. That juice is then bottled with a small percentage of the base wines from other years. Most bottles contain wine from two or three vintages! (Hint: the small letter L on the label followed by a number represents the vintage year that is the majority of the wine).
Vinification: Grapes from at least four red varieties are hand harvested, gently pressed and blended. The juice is then bottled while still fermenting. The wine spends up to two years on the lees and the fermentation finishes in the bottle. Each bottle is hand-disgorged by the winemaker.
Match it with: Refreshing on its own as aperitif. Or pair it with seafood, fish or savoury appetisers.
