Average age of vines: 70 years old or more
Vinification: Grapes are hand-harvested, and then destemmed. Starts with a carbonic fermentation for 4/5 days, then the juice and the skin stay in contact for 4/5 weeks, few punch down, gently infusion to extract tannins.
