Vinification: Grapes are hand picked // Maceration for 8 days // Natural fermentation with indigenous yeasts // Ageing for 11 months in barrels (90% of the wine aged in old barrels, 10% in new oak barrels) // No fining, no filtration, 2g of sulphites added at bottling.
