This is an elegant old-vine Chenin of great aromatic purity. A subtle nose with layered citrus and aniseed notes. A lean, straight wine with almost tannic structure and a long finish. An atypical expression of Chenin and excellent with food.

The winemakers, Thomas and Charlotte Carsin, are avid sailors, and their love of the sea often influences their winemaking and naming. However this cuvée is a tribute to the land- it is made from eighty year-old native vines (no clones) and aged in clay amphora. The amphora allows oxygen into the wine and imparts no wood flavours, giving a pure expression of terroir. The name "Ephata" means "be opened" in Greek. Of this wine Thomas says, “Open up to the charm of Ephata, the wine will do the rest!”

Vinification: Grapes from old vines are hand-harvested and gently pressed. Natural fermentation for 6 months in 10hL sandstone amphora, then aged one year in 140L terracotta amphora with topping off every 2 month. Finally, aged another 6 months in 10hL sandstone amphora. No sulphites. 2013 was a cool, tricky vintage for the Loire and the yield was very low (10-16 hl/ha). The grapes were very concentrated.
