"Quinte Essence" Extra Brut (Sparkling) 2005
A blend of 2/3 Pinot Meunier and 1/3 Chardonnay, this wine is distinguished by its lovely freshness, minerality and purity. Notes of apple compote, honeycomb and a hint of creaminess and smoke. A gastronomic wine marked by richness and strong flavours. Lots of brioche and the complexity of an aged champagne, magnified in magnum! The extra lees ageing gives a pronounced finesse and an expansive energetic finish.
Story: Franck Pascal was one of the first biodynamic growers in Champagne and remains one of its most passionate and gifted winemakers. He meticulously cares for 7 hectares in the Vallée de La Marne with what he calls, “a deep sensitivity for nature and the energy forces in our vines.” The name refers to quint– a musical term related to tempo, and essence– the aromas coming from nature.
Vinification: 45 year-old vines growing on chalk, clay, limestone and pierre meulière soils. Grapes are hand-harvested, gently pressed and placed in an enamelled vat for the first alcoholic fermentation. Meunier and Pinot Noir are fermented separately then blended together after fermentation. Indigenous yeasts only, and kept on its lees for over 11 years. Unfined, unfiltered with zero dosage.
