Matthieu Cosse, renowned for his wines in Cahors embarked on an exciting new project with Jerome Ossard. The vines for this cuvée can be found on the modest 2-hectare plot located in Blaye which has a beautiful limestone and clay-based sols overlooking the Gironde estuary.
Vinification: Grapes are hand-harvested and aged fermentation happens spontaneously with indigenous yeast. The wine is left to mature in concrete before bottling.
Match it with: A seasonal spring risotto or light sea food dishes.
