Auvernier "L`Oeil de Perdrix" (Rosé) 2022
An amber-coloured rosé from 100% Pinot Noir. Powerful, dry and full-bodied with savoury aromas and a slight effervescent quality. Red fruits and spices develop into rose, herbs and apricot kernel. A superb gastronomic rosé with discreet tannins to match a wide variety of dishes.
Jean-Denis Perrochet crafts serious Swiss wines in Auvernier, a charming village bordering Lake Neuchâtel where his family has made wine since the 16th century. He emphasises local grapes, grown and vinified with modern and traditional methods, but always with respect for the terroir. L`Œil de Perdrix is ??the great traditional rosé from Neuchâtel. Jean-Denis explains, “A hundred years of rough climate meant that not much Pinot Noir ripened in the region. So many winemakers decided to make rosé from those grapes.”
Vinification: 40 year-old vines growing on deep marly soils. Juice and skins macerated for 2-3 days in large vats, then pressed and left 6-8 months on the lees. Aged for 8 months in barrel then bottled and sold immediately.
