This Chasselas with a distinct edge. Slightly cloudy (unfiltered) and has a light spritz (from malolactic fermentation). An elegant palate with notes of quince, lemon confit and herbs. Vigorous and lively. A crisp, refreshing summer apéritif.

Jean-Denis Perrochet crafts serious Swiss wines in Auvernier, a charming village bordering Lake Neuchâtel where his family has made wine since the 16th century. He emphasises local grapes, grown and vinified with modern and traditional methods, but always with respect for the terroir. Once widespread in Switzerland, Chasselas suffered from poor production and fell out of favour, but it has become a specialty of the domaine. Jean-Denis says, “This wine has a marked regional character. Lively and subtle, it reflects the years from which it comes.”

Vinification: Grapes grown on deep marly soils. Briefly macerated, then pressed with a 100 year-old vertical press. The wine spends six months on the lees and ages 6-8 months in large oak barrels. Unfiltered, to retain the character of this iconic grape.
