From the plot names "Hautes Bruyères", these soils are stony and so result in slightly withered grapes. The harvest is de-stemmed and maceration is for 1.5 months. The juices are then extracted by gravity in barrels and aged for 18 months with 4 to 5 toppings. The barrels are then racked to put the wine back in mass. A clarification is done naturally by 2 to 3 rackings before bottling. Les Hautes Bruyères is aged in the cellar for 4 to 5 years.
