"Fluence" Brut Nature (Sparkling)
A classic blend of Chardonnay (19%), Pinot Noir (26%) and Pinot Meunier (54%).
The high percentage of Meunier gives this Champagne a roundness, alongside citrus and stone fruits, with creamy, biscuity notes and an exceptionally clean finish. This is Franck’s signature style – fresh, elegant, pure and perfectly balanced. The ideal introduction to the beauty of grower Champagne. Zero-dosage.
Match it with: Raw or steamed seafood, oysters, a group of friends.
Riesling" Le Dragon" (White) 2020
Lithe and dry, this white is subtly laced with floral, apple and mineral aromas and flavours. It`s balanced and harmonious with a long, mouthwatering finish.
Terroir: From the south-facing Drachenloch (Dragon hole) vineyards - this exceptional geographical site is considered one of the warmest in Alsace. The vineyard is composed of limestone soil, positioned in the middle of a rocky outcrop that protects it from the North and East winds.
Age of the vines: 40 years old
Match it with: Perfectly matched with hard goats cheeses and those coated in ash.
Bourgogne Aligoté, (White) 2021
Grown on limestone and clay soils at 250 meters above sea level, this Aligoté is flinty, mineral, and fresh with a beautiful roundedness from the 12- 18 months ageing in Burgundy oak barrels.
Terroir: Orientation East and South-West. The soils are clay-limestone that date from the Kimmeridgian era.
Vinification: Pressing in a pneumatic press following a long and gentle cycle // fermentation with indigenous yeasts // light static cold settling // fermentation and ageing for 12 to 18 months Burgundy oak barrels.
Match it with: An excellent accompaniment to slightly spicy or salty dishes, or even fatty foods, as flavours tend to be softened by the fresh acidity of the wine. Excellent with meat, fried foods, sausages, seafood and goat`s milk cheeses.
Cahors "La Fage" (Red) 2019
A Malbec that offers the best of both worlds: Full-body and lots of structure, but still real freshness and finesse. Blueberries, black cherries and red plums, with a hint of smoky cassis and spices. Concentrated and lively with velvety tannins and a tart texture.
Story: Matthieu Cosse and Catherine Maisonneuve are leading a renaissance of the Cahors region. They share a vision of refined, elegant wines with a distinct personality. The grapes used for this wine comes from middle section of the parcel just across from the domaine, which has a north-facing exposure, meaning it has more shade and grapes take longer to ripen. The 55 year-old vines grow on red clay soils with limestone underneath.
Vinification: Grapes are hand picked, table sorted and destemmed. The fermentation takes place in thermo-regulated stainless steel vats using only indigenous yeasts. The wine is aged for 14 months in used barrels. Unfined and Unfiltered.
Match it with: Bacon Burger, steak frites, strong cheeses.
VDF "Emilien" (Red) 2020
Chateau Le Puy is situated on the rocky plateau of St-Emilion. They have been farming organically since the 1600s and have been certified as Biodynamic since 1988. Le Puy is a pure expression of St-Emilion. This wine has elegant, ripe fruit aromas of blackcurrant and redcurrant, accented with nutty roasted almond notes and the occasional hints of mushroom. Le Puy brings elegance and history to your table.
Match it with: Slow-roasted meat, roast turkey or roast beef.
Terroir: Clay-silt with a clay-limestone substrate on the rocky plateau of St-Emilion.
Average age of vines: 50 years old
Vinification: Grapes are destemmed // fermentation happens in a cement tank // aged in oak vats (Foudre) for 12 months // further 12 months in oak barrels // a tiny amount of sulphur is added at bottling.
Banyuls Rimage (Sweet) 2023
Terroir: Known for its exceptional micro-terroir, the Côte Vermeille, has dry and arid summers, mild winters, and a strong influence from both the Tramontana wind and the sea. The soil is Schist derived from the decomposition of the Cambrian volcanic basalt.
Age of vines: 40-50 years old
Vinification: A blend of 90% Grenache noir and 10% Carignan, only the best, perfectly ripe grapes are hand-selected and de-stemmed. Fermentation is spontaneous with indigenous yeasts. Mutage is carried out by adding organic neutral-tasting wine alcohol and maceration last approximately one month at controlled temperatures. No sulphites are added during winemaking, only a small amount at bottling to help stabilise the wine.
Ageing takes place in old wooden barrels for a minimum of 8 years. This wine is unfined and unfiltered.
Match it with: This is a sweet and complex wine with delicate and fine aromas of cocoa and roasted coffee, prunes, dried fruits and a great salinity which gives it freshness and length. Best served at 16° this wine pairs beautifully with cheese, fresh figs, foie gras, or with chocolate desserts but is also delightful just by itself!
